I started this blog because I was (am) going through a difficult time in my own life and I want to attempt to help others going through the same difficulties. Maybe make the struggle just a little bit easier for those who are forced onto an emergency diet. Maybe help those who fight with all they have, thinking their only options are to “hate food and live”, or “love food and die”. You do have more choices! I am here to help!
About us
My family is a food LOVING family. My husband has hispanic roots, so beans, rice, tortillas, and sweetbread are in his blood. Potato was a part of nearly every breakfast and dinner (sometimes even in chip form at lunchtime). My husband’s family had soda stocked since he was a child, and it quickly became the new water. My family was no better, with their unusual and unrequited love for Italian foods. My go to was pasta pasta and more pasta. Every birthday in my family ended in a trip to Olive Garden for pasta and cake. And I will not even touch on the stressful, depressed teen that had her own work money during high school. PASTA!!!!
Okay, so now we fast forward through the years to the present. We moved to the Las Vegas valley 5 years ago. My husband and I have 2 children, 2 dogs, 1 rabbit, and 5 fish left (after an evil cannibal fish got to the rest). Las Vegas Valley is great (Henderson and Boulder City especially). We have some great people, great views, and great mountains all around us. We also have Bakeries. Oh my goodness do we have bakeries! Bakeries and places with sweet treats adorn nearly every city block, and with fresh bread at my fingertips, it was “sin city” indeed!!
Over the years, it was time to buy a bread maker in order to enjoy my vice on a daily basis, without going bankrupt in the process. Fresh bread here I come!!
In rolls the bearer of bad news…The doctor.
Not the fantastic space loving timey wimey doctor we all love and adore. No. The blood sucking, x-ray ordering, time consuming, drug enforcing, money absorbing doctor. Here with the life altering news that very bad type 2 diabetes is destroying the body and if things don’t change NOW, and I mean NOW, your organs will fail in less than a year, and so will you. Giving me pretty much a 2 year hands on nightmare before losing my husband and the father of my 2 grade school children. That doesn’t even graze the surface of what HE will be going through during the same timeframe. Shit.
After, was the immediate shock, fear, and switch to a KETOGENIC (KETO) and DIABETIC diet. And since then, has been the constant research and trial and error of how to keep my husband living a happy, healthy, well fed and fulfilled life, while battling the rising depression, cravings, sicknesses, mood swings, pain, doctor visits, chaos and more that arise. Through it all, trying to keep some semblance of sanity. My husband and my family are my everything. I am a stay at home, homeschooling, hardworking mom. I will try everything to keep my family on this Earth as long as possible. Along that path, I will share with you the best of what I have found; The recipes that are really tasty for a carb loving, junk food sneaking, bread craving, potato loving, sugar addicted family… the ways I have found to fill all the nasty cravings and needs… helpful hints for pains and fears… ways to cut costs and deal with food fickle family members… and really, just anything I think might be beneficial… I am NOT a doctor, so nothing on here should be taken as though I was.
