We CAN eat Beans!

Oh my goodness, look what I have found for us all!!!! BEANS!!!! We can have beans again!!!!

 

Here is my recipe 🙂 I hope you enjoy it as much as we did! The whole recipe has 3 1/2 grams of carbs (more if you add in any carbs for your cheese) – tillamook cheddar <1g carb for cheese)

 

MASHED BEANS (we don’t do much fried) using black soy beans

1/4 to 1/2 shallot (1.4g net carbs in 1 whole shallot)- onion would work too

-or- bacon (0 carbs)

2 tbsp Olive oil (0 g carbs)

1 can black soy beans (1g carb per 1/2 cup)

1/4 cup chicken (or veg broth) (approx 1 to 2 g carbs)

1/4 cup heavy cream (0 g carb)

salt

pepper

grated cheese (if desired)

 

olive oil and a shallot (tastes like a mix of garlic and onion, but looks like a small pinker onion)+ a dash of salt

OR bacon grease from cooking raw bacon pieces – NO scallion

sauté shallot for a bit – 1 or 2 minutes (watch for scent and color change)

if using bacon, remove cooked bacon pieces but leave the grease

add beans and a bit of salt and pepper (don’t over season)

1/4 cup chicken (or veg broth)

simmer for 30 mins or so covered (until very soft)

test to make sure of tenderness. turn off when done

add a less than 1/4 cup heavy cream (reserve some to thin out later, if desired)

blend with immersion blender or work out those arms and mash like your life depends on it

add a bit more heavy cream to thin and blend until thickness desired

taste

salt and pepper more to taste

add some grated cheese on top if you like 🙂

 

I made beans (1/2 cup) and ground beef (1/2 to 1 cup) and cheese (1/4 cup) for dinner, with my newly found Magic Pop (1) broken into pieces to use as ‘chips’.

In case you were wondering, we all had a handful of raw baby spinach (0.4g carb per 1 cup) on the side as well as some green beans (3.5g carbs per 1/2 cup). The whole meal was approximately 8 carbs (our dinners are usually a bit higher in carbs than other meals). But we also had a Magic Pop at 4g a piece.

 

Feel free to cheese inside or double up the recipe to store, etc.
