My family used to stock ice cream to the point where we would occasionally have to play the “what do we throw out or cook?” game to make more room for our frozen delicacies. About 2 weeks into our new diet, we were craving something super cold and super sweet. This post will be a work in progress I assure you. I will be searching and trying new frozen treats and sharing them with you (hopefully frequently).
For now, I bring you a tasty ice cream alternative that is a good KETO ice cream, DIABETIC ice cream, or just tasty frozen treat to add to your collection…
BASE
Cool Whip (2tbsp=2g carb/2g sugar )True Whip (2tbsp=3g carb/2g sugar), or similar frozen whipped topping)
FRUIT
raspberries: 10 berries= 2 grams carbs = 1 gram sugar = 0 grams fat
blueberries: 10 berries= 2 grams carbs = 1.5 gram sugar = 0 grams fat
blackberries: 10 berries = 2 grams carbs = 1 gram sugar = 0 grams fat
NUTS
Walnuts: 14 halves = 8 nuts = 2g carbs = 1 gram sugar = 18 grams fat
Macadamia: 10-12 nuts = 1.5 g carbs = 1.3 g sugar = 21 grams fat
CHOCOLATE
Lily’s: I have found that these bars are by far the best tasting, lowest carb, natural chocolate bars that both diabetics and Keto dieters can savor. ****Each serving is actually 1/2 of the entire bar! Because of this, I split the bar into 3 servings (2 rows of 4 pieces in each serving).**** There are 24 pieces in each bar.
For our “ice cream”, we use 2 or 3 pieces and cut them up to mix in.
Lily’s Caramelized and Salted milk Chocolate (1/2 bar): 10 grams carbs = 1 grams sugar = 15 grams fat
Salted Almond and Milk (1/2 bar): 10 grams carbs = 1 grams sugar = 15 grams fat
Dark Chocolate Coconut (1/2 bar): 7 grams carbs = < 1 gram sugar = 16 grams fat
Dark Chocolate Crispy Rice (1/2 bar): 11 grams carbs = < 1 gram sugar = 14 grams fat
Double chocolate Crunch (1 full bar): 8 grams carbs = < 1 gram sugar = 10 grams fat
There are soooo many more flavors. Here is just a semi-random group of 5 (“caramelized and salted” milk chocolate is our family favorite so far)
PIZAZZ
365 brand (Whole Foods) Organic Chia & Flax Ground Seed Blend, Vanilla Maple Flavor. (2tbsp = 2 grams carbs = 2 grams sugar = 3.5 gram fat). ****Less than 1 tablespoon is all I add of this little seed blend to get some great flavor and extra sweetness, depth, and a little pizazz to my “ice cream”.****
